Making walls

I want to make some walls and ever perhaps a stone building. The type of rock I want would be rough cut field stone such as is found in Pennsylvania. I am not looking for nice even blocks. I guess that I somehow would have to make these out of plaster. How would you do this...especially, how would you get some stones sticking out more than others and make all the surfaces rough?

Stippling is a technique where you poke at the plaster while it's settijg up...you can do this with a brush, a sponge, your fingers, popsickle stick, etc...
