2 inches is common because you can get your fingers in to lift a car when needed. If you test, test, test - you could go down to an inch and a half on straights, but that might not be satisfactory over the long haul.

Back in the day in some yards 13' (1.8" HO) was common to save space. At that spacing the trainmen had to walk on the car roofs to pass hand signals. But at least 14' (2" HO) is common now.
