New Guy Here - Benchwork and DCC Question

If this is answered someplace else on this forum, please point me to it !

Just getting in to this since getting the bug after visiting a train museum with my dad over Thanksgiving. I need some advice on the base structure to build a bench. I'm doing HO and bought (won) some Harley Davidson anniversary sets on ebay. Any suggestions on the plywood thickness ? Maybe someone has a plan for benchwork they could share ?

Also, I'm sure these Harley sets I believe are from Walthers. Can they be convereted to DCC ? If so, is it difficult ? I've got an electronics background and can handle a soldering iron so hopefully its not too involved.
